Porcini Potatoes
1/2 cup Roasted Garlic and Cheese flavored olive oil
2 lbs. potatoes, cubed
2 tbsp. milt
2 tbsp. parmesan cheese
Boil potatoes for 12-15 minutes.  Drain well and mash, gradually adding oil and milt until soft.  Stir in parmesan cheese.
 
Med Style Tomato and Cucumber Salad
Sun-dried tomato and basil flavored olive oil
tomatoes
cucumbers
red onions
balsamic vinegar
feta cheese
Kalamata olives
capers
Place thinly sliced tomatoes, cucumbers and red onions on a serving platter.  Salt and pepper to taste.  Drizzle over sun-dried tomato and basil flavored olive oil and balsamic vinegar.  Sprinkle with Feta cheese crumbles, sliced Kalamata olives and capers.
 
Simple Tomato Salad
Garlic and Tomato flavored olive oil
3 ripe medium-sized tomatoes
4 fresh basil leaves chopped
2 Mozzarella cheese balls
2 tbsp. balsamic vinegar
salt and pepper
Slice the tomatoes, arrange them on a platter, and top each with a slice of Mozzarella cheese.  Sprinkle fresh basil over top of Mozzarella cheese.  Drizzle 3 tbsp. of olive oil and 2 tbsp. balsamic vinegar.  Season with salt and pepper and serve.
 
Crab Corn Bisque
1 pkg. LeGout cream soup base (available at Cost Cutters)
meat from 2 Dungeness crab
1 qt. whole cream
2 cups cooking sherry
2 Campbell 11 oz. cans of tomato bisque soup
3/4 gal. milk
1 Signature Soup 25 oz. Cravin' Crab & Sweet Corn Chowder
1 8 oz. can sweet whole corn
 
Pasta and Vegetable Stir-Fry
Roasted Garlic and Cheese flavored olive oil
Stir-fry vegetables of your choice
Stir-fry vegetables (zucchini, bell peppers, mushrooms, etc.) in a small amount of olive oil.  Drizzle cooked pasta with olive oil, toss to coat, add vegetables and toss again.  Sprinkle with grated Parmesan at the table.
 
Grilled Salmon
Rosemary & Garlic olive oil
Salmon steaks (or thick filets)
marinate salmon in rosemary and garlic olive oil at least 10 minutes.  Grill over high heat.
 
Pasta with Seared Seafood
Rosemary and Garlic flavored olive oil
4 cloves garlic
1/2 - 1 lb. scallops and/or raw shrimp
dry white wine
1 tbsp. Italian parsley
pasta
Heat 1/4 cup olive oil in a large non-stick skillet over high heat.  Add 4 cloves of finely shopped garlic immediately followed by the scallops or shrimp (cook separately if you're using both).  Stir-fry 2-3 minutes, or until done.  Add parsley and dry white wine to taste.  Warm through and toss with cooked pasta.
